The La Serre Bistro team spent a well-deserved day off at the PATH bar school with the largest importer and distributor of the world’s most popular alcohol brands in the Middle East; African + Eastern.
African + Eastern (A+E) have a PATH Bar school, a bar school developed by A+E to educate restaurants and bars using the products and brands in their portfolio. Located at the head office in Al Barsha, there are 18 fully-equipped bar stations for attendees were they can shake and stir to their heart’s content. The La Serre team hotfooted it across town to further develop their wine and bar knowledge as part of an internal bar academy created by the boys at the bar, enhancing product knowledge and operational skills to ensure the guest experience cannot be faulted.
Anca Lazaroni, sommelier at La Serre started the training session with the basics in wine training; learning about the 10 most common varieties of grapes and pairing them with the many personalities of women. Anca’s analogies are a memorable teaching tool, referring to a Cabernet Sauvignon as wonder woman, Pinot Noir as a lady not so easily pleased and for the woman who loves to be in the spotlight, the Gewurztraminer meaning the grape is the centre of attention.
Sebastian, Head Bartender at La Serre hosted an entertaining workshop where staff got practical, showcasing the most commonly used bar tools, such as the Mexican elbow, a manual citrus tool that assists the bartender allowing the citrus juice to be squeezed a la minute into drinks and also how to swizzle, which is a method of chilling a drink quickly.
The bar team finished off the first module of the bar academy with teaching the Bistro team all about widely-recognised basic cocktails such as Dry Martini, Mojito, Whiskey sour, Margarita and Moscow Mule.
The Bar Academy is an internal training course for La Serre staff during the summer and the next session coming up is the spirits master class.
