Caterer Middle East has rewarded our commitment to fusing fresh, organic ingredients with cutting-edge cooking.  We were proud to hear that our head Chef Izu Ani won the award for Head Chef of the Year at the Caterer Middle East Awards ceremony at the Atlantis, The Palm.

As a driving force behind our mission to innovate, while championing simple elegant cooking, we are delighted that Chef Izu has been recognised in this manner. After receiving the award and in a typically humble fashion, he stated:

“This award is for my talented team at La Serre – for all their passion, hard work and dedication.”

As well as ensuring that each plate of food meets the same high standard as the last, Chef Izu was praised for his focus on staff development. Having trained the 62 different chefs that have come through the kitchen since the venue opened in 2013, his passion for excellence has spread beyond the walls of the Bistro & Boulangerie.  In speaking about his belief in operating a teaching kitchen, he added:

“I’ve had great privilege in working for great chefs. Each time I’ve worked for chefs, they’ve imparted their wisdom and their experience on me. I believe that everything we have is not ours. So everything I’ve learned is for me to share. I’m only a custodian of what I’ve learned so it’s my turn to pass it on to somebody else for them to profit from it and to pass it on to the next generation.”

Some of Chef Izu’s initiatives have included ensuring all staff have 3 days off a week, to offset the long hours in the kitchen. He also has a project in progress – the La Serre Research and Development Kitchen – that will allow chefs to hone their skills and experiment with new dishes right here.
