Since the start of the year, the chefs at La Serre have cooked 155,000 eggs! Which equates to 77,500 portions of the most popular dish in the Boulangerie, Eggs Benedict.
Free range, organic, corn-fed.
The eggs used at La Serre are organic AND free range, which means they do not contain any hormones or antiobiotics and are certified organic by Qualite France. Hens are free to roam in fresh air and are fed with a special feed containing 100% vegetal minerals and vitamins, free from any added hormones, antiobiotics, steroids, animal-by products, recycled or processed food. After all, happy hens lay happy eggs.
Brown or white.
For European expats, brown eggs are the norm whereas expats from across the Atlantic are used to white eggs. In actual fact, there is no nutritional difference between the two. Brown eggs from hens with red earlobes and white eggs come from hens with white earlobes.
