There’s nothing like a long hot summer’s day to inspire our creative bar team to come up with imaginative concoctions behind the bar. The Porte du Soleil is currently featured on our mocktail menu during Ramadan, as it won’t be on the menu for long, we are sharing the recipe so our wonderful guests can continue to enjoy Porte du Soleil at home. Ohlala!
Porte du Soleil recipe
30ml strawberry puree
15ml date-infused rose syrup
10ml cranberry juice
30ml lemon juice
Pinch of fresh rosemary needles
Sprig of mint
Stick of fresh Rosemary
1. Before starting, you will need to prepare the date-infused rose syrup. Place chopped dates (quantity is down to personal preference) into the bottle of rose syrup, refrigerate and leave for 24 hours.
2. Pour all ingredients (except the garnish) into a shaker with cubed ice, give it a good shake and then pour in a rocks glass over crushed ice.
3. Garnish with a sprig of mint and some Rosemary. Voila! Ready to serve!
