For those of you unable to escape the scorching summer, there is only one place to be and that is in the kitchen! Our Head Pastry Chef has created a super simple muffin recipe for parents and the little ones to get creative using toppings and fillings of your choice.

Serves: 4

Prep time: 2 minutes

Cooking time: 20 minutes


2 eggs

100g vegetable oil

100g sugar

100g flour

7g baking powder

1 vanilla pod/ 1 tsp vanilla essence


1. Preheat the oven to 160 degrees.

2. Mix all ingredients together in a large bowl until fully incorporated. You can add chocolate chips, blueberries, chopped dates or any other ingredient of your choice.

3. Bake for 20 minutes until the edges of the muffins are crisp and golden. Once the muffins are cool, you have the option to top with almond flakes, biscuit crumble or icing. Voila!
